A visit to Balsall Creek Winery, located just north of the Dundee Hills in Oregon’s Willamette Valley, inspired this summer pairing. Balsall Creek is a family business, dedicated to producing exceptional quality wines while paying special attention to sustainability and preserving the environment. Wrap fresh peach with prosciutto and top with Chèvre drizzled with aged, sweet balsamic vinegar. Enjoy!

Ransom Spirits are produced in Sheridan, Oregon. Offering a variety of spirits both alcoholic and a wonderful selection of non-alcoholic choices. This pairing was inspired by The Emerald 1865 American Whiskey. This award winner has bold aroma of oats, malt, and earthy minerals. the finish is long and satisfying, with a touch of spice. Aged three to six years in mixed cooperage of French and American oak barrels.

Gustone and Rosmarino Osteria Italiana are truly gems that you’ll not want to miss. FYI the cheese shown is Negroni Blue - soaked in gin, sweet red vermouth and bitter liqueur, and topped with candied orange slices.
